Protein-Packed Beef Rotini
Ingredients:
8 oz red lentil rotini pasta
2 tablespoons olive oil
2 cloves garlic, minced
100g onion, diced
150g red bell pepper, diced
100g cherry tomatoes, halved
2 cups baby spinach
16 oz 96/4 lean ground beef
Salt and pepper to taste
Optional: grated Parmesan cheese for serving
Instructions:
Cook the red lentil rotini pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté until fragrant and softened, about 2-3 minutes.
Add the lean ground beef to the skillet and cook until browned and cooked through, breaking it apart with a spatula as it cooks.
Once the ground beef is cooked, add the diced red bell pepper to the skillet and cook for another 2-3 minutes until slightly softened.
Stir in the halved cherry tomatoes and baby spinach, and cook until the spinach wilts and the tomatoes soften, about 2-3 minutes.
Add the cooked red lentil rotini pasta to the skillet and toss everything together until well combined. Season with salt and pepper to taste.
Serve the red lentil rotini pasta hot, optionally topped with grated Parmesan cheese.
